No other oil like this exists. Farga variety from trees between 1,000 and 3,000 years old, with organic certification and an extraction yield of 9% — where the industry targets 20%. Less oil per olive, but every drop preserves the full spectrum of its polyphenols and aromas.

We don't seek to be everywhere. We don't bottle anything that doesn't reach the highest quality. That's why El Poaig is not always available. That's why it's not for everyone."

The Art of Excellence

The Pruning

We remove old branches so the tree channels all its energy into fewer fruits. The result: olives with the optimal flesh-to-pit ratio and higher antioxidant concentration.

The Harvest

Gentle mechanical harvesting that protects buds and bark. Branch to mill in under 4 hours, so the olive neither oxidises nor loses a single aromatic nuance.

The Extraction

Milled at low temperature with low extraction yield. While the industry may pursue yields around 20%, we accept only 9% to preserve integrity. Less quantity, but every drop retains the full integrity of its polyphenols and aromas.
